No Wi-Fi icon on menu bar in Recovery Assistant

if you’re stuck on the Recovery Assistant because it’s asking you to connect to Wi-Fi or restart, but there is no Wi-Fi option in the menu bar, try restarting again in recovery mode, ie for the 2021 Mac models this means that after the computer is shut down, you do a quick press of the power button immediately followed by a long press of the power button, held down until you see the Mac restart in recovery mode.
