If my phone is stolen and damaged beyond repair when returned, do I have any coverage or replacement discount if I dont have apple care??

No. However, if it's recovered intact (even if not necessarily working but damaged with all the pieces more or less there) then it should be eligible for an Apple service replacement at a lower price than purchasing a new iPhone.
