How to fix my cellular data not connecting

It pops up saying you need to have an update bite when I go to update it won’t let me update

iPhone 7, iOS 14

You probably need to update the carrier settings, not the iOS version. See:

Manually update your carrier settings on your iPhone or iPad - Apple Support

If you see an Update Failed or Apple Pay Not Available alert after iOS update or restart - Apple Support
