iPhone 11 Pro Max
Indirectly yes
Tap Messages -> tap & hold on that message -> select Copy.
Paste into Pages or another word processing program.
Then -> Convert Pages documents to PDF, Microsoft Word and more
Convert Pages documents to PDF, Microsoft Word and more – Apple Support (UK)
As with iMazing, the text message must also be exported to PDF first.
Try with PDF MAX app - App Store.

If you only need it once / sometimes use the free version.
If you need more often there is the Pro version.
I use the Pro version on my iPad.

The first thing you should do is ask your attorney what they suggest. It is possible that there are specific requirements.
Beyond that, I agree with Lawrence, use one of the computer applications that will print entire conversations including time and date stamps. I use PhoneView (Mac).

OK, but will it extract complete conversations from messages in addition to producing PDFs? Phoneview and TouchCopy will. And apparently PDF MAX also allows the PDFs to be edited, which would preclude its use as legal evidence.

But why would I use something that sounds complicated when I could use something like PhoneView or TouchCopy? PhoneView extracts complete conversations, with date stamps and pictures (if you ask it to) in about 90 seconds.
Regardless, the OP should first consult with their attorney.
Get a 3rd party app for your computer such as TouchCopy or iMazing. Either can create nicely formatted PDFs of your messages.
Can PDF MAX import conversations from the Messages app? That would be a basic requirement for this use. I didn’t see that as a feature in the description.
TouchCopy wins, then; it can create PDFs of all of your conversations directly from the phone, not one message at a time.
TouchCopy wins,
Touch Copy is not available in the App Store and is not free.
PDF MAX is available in the App Store & Free.
Then it's up to the OP to choose.
TouchCopy runs on your computer. It is not free. As this is for a legal case I doubt that $40 for TouchCopy is material. But it does exactly what the OP asked for.
PDF MAX is also available for macOS computer.
