Anyone else’s watch randomly start to irritate their skin? I’ve worn my Apple watch since 2020 and had no issues up until now.

You need to speak directly with Apple Support. Use that link again and just select to speak with someone. We are just users here, so the threat of a lawsuit is not necessary. You can speak with Apple, but if you look specifically for an issue with your wrist, you are not going to find it listed. You need to select the Watch and speak with someone. You can also use this link to find your location and the different ways to contact Apple. Contact Apple for support and service - Apple Support
