How to change default player from Apple Music / Remove Apple music from Mac

I'm new to Mac, do not use Apple Music, nor plan to. On many events (accidental key stroke, Jabra headset actions/buttons used) apple music is being started and taking the focus of keyboard + doing some processing.

It's super annoying and ATM one of the worst experience on Mac. Can't find anywhere in the internetz, so please advise if any of the bellow is possible (I'm open to other solutions as well):

• Removing of Apple Music at all
• Making other player default one (spotify/VLC/...)
• Removing on system level media key strokes / actions at all
