Why are my emails linked to a friends contact? Emails I had never written him on?

Check in Contacts app, check your contact card contains your own name, Apple ID email address and phone number.

Remove anyone else's information that may appear in the contact card.

Check on your iPhone -> go to Settings -> your Profile -> Name, phone number, email .
