delete game center
How can I just plain GET RID OF Game Center?

Welcome to the Apple Support Communities.
Since Game Center is a built-in feature, there isn't a way to completely remove it, however you can sign out of it by following the steps below:
Open Settings > Game Center. Scroll to the bottom and tap Sign Out.
