On the Watch? If on the iPhone, you go to Settings>Display & Brightness, are you set on Dark? Do you have any Accessibility Settings turned on for the Watch? If on the Watch, you go to Settings>Accessibility, is Grayscale turned on?
I would not know of any other thing to do. You can either try unpairing the Watch from the phone, resetting it and then pairing it again, or you can use the Get Support link at the top of the page here or if you have an Apple Store close by, you can make a Genius Bar appointment there to have the device examined by Apple.

unfortunately in my area there’s no Apple Store and I’ve been trying to reach out to Apple but no response
guess I’m going to have to hold tight until someone else experiences the same and we find a solution thanks again!
Is Maps the only thing that is appearing in Dark Mode? I cannot find any setting to change that just for Maps.
It looks like email is also in dark mode?

I’ve checked both… Dark mode is not enabled nor in automatic and greyscale is not turned on

I have exactly the same problem as IslandJCW and haven't found any way to resolve the problem despite suggestions above
