I accidentally tapped this symbol in the Music app on my phone, which seemed to turn it off. I don't know what it is, but I can't turn it back on.

Try playing different songs - it will be available for some but not others. The article mentions,
If nothing happens when you tap LyricsÂ, then either you’re playing a song that's not from the Apple Music catalog, or lyrics aren’t available for that song.
