Can I still use my carrier if I but an iPhone from Apple?
I would like to purchase an iPhone from Apple. I will pay the complete price. Once I purchase the phone, can I still use my current carrier, which is Boost?

Yes, if you are satisfied and want to continue with the same provider. That is also handy then you don't have to change anything, you use the same number.
If the SIM format is different, visit or contact your carrier and request a replacement SIM card, normally it is free.
