My iPhone was stolen, how do I transfer info from my old iPhone to me new one?

I no longer have my iPhone, but I see its "profile" still exists in iCloud, is there a way to transfer that info to my new phone?

Profile doesn't bring your data back, you would need to be backing up to icloud or itunes so you can do this Restore your iPhone, iPad, or iPod touch from a backup - Apple Support
