Just bought a new iMAC M1/8GB/512GB SSD/24"
with all the new M1 processore comingout every few months, (MAX/PRO/ULTRA)
is it possible to upgrade the proccessor?
was it stupid to buy it? should I wait for the new version (when ever it will come)?

You cannot upgrade the processor. What you buy is what you have to use unless you but a whole new Mac.

For any new device you bought, you have 14 days return window with no question asked.
Upgrade the processor is not available.
FYI: There will always be new version, this is called innovation.
Historically, a computer you buy soon has a more advanced model available. That's just the nature of the business.

Hello, the processor does not change. You can increase the amount of RAM.
No you can’t increase the ram (as purchased) on an M1 iMac, it’s all incorporated on an integrated motherboard. The iMac specified when purchased is fixed and can’t be changed.
Does your new iMac do what you want? If it doesn’t then you didn’t do your research beforehand. There is no need to buy a computer with capabilities beyond the use to which it going to be put.
