Having activated AirPlane mode from the Control Centre, just tap the WiFi and Bluetooth icons to disable them.

These override settings are “sticky” - and will be remembered by your iPad next time that you enable (or disable) AirPlane mode.

AirPlane mode initially disables all radio interfaces (Cellular, WiFi and Bluetooth/BTLE) - however, you may then manually re-enable WiFi and/or the BT/BTLE radios. The override is sticky - and will be remembered by the iPad when AirPlane mode is subsequently toggled Off or On.

The current radio status is visible from the Control Centre - the icons being Green, Orange, Blue, Grey on Grey, or White on Grey.

Of the available radios, it is only Cellular that is forced to a fully disabled state when AirPlane mode is active. As such, where Airline and regional regulations permit, you can have AirPlane mode enabled - but WiFi and/or Bluetooth connections remain available during cruise (usually defined by regulations as above 10,000’ agl).
