I just added an Apple gift card through the App Store. It appears directly under games on my account, but I don’t buy games and want it to go to my Apple One subscription. Will they automatically use it toward payment there, and then go back to my credit card on file?

Your Apple ID balance will be used first when allowed.

It's allowed for Apple One and everything except for gifts, disaster relief campaigns, and some in-app purchases.
