iTunes updates usually maintain the desktop icon, but if you have the iTunes icon on the Taskbar, that usually stops working after an update. However, I notice that this week's update (to 12.12.3.5) managed to keep the Taskbar icon intact but added a second shortcut on the desktop, but without the iTunes icon:

I've just tried adding the iTunes icon to the iTunes (2) shortcut that you see in my screenshot, but I was not able to get to the correct folder (not sure why). If you have the same problem, delete that shortcut and create a new one. I've just created a third shortcut without problems.

I'm not sure that there's anyway to update iTunes while stopping it form mucking about with the shortcuts and icons; it's effectively down to whatever Apple do within the update.

However, restoring the desktop shortcut and correct icon should be easy:

    • right-click on an empty space on your desktop and select New/Shortcut from the pop-up menu
    • in the window that opens up, click the Browse... button and navigate to the iTunes programme folder (it should be C drive/Program Files or Program Files (x86)/iTunes and select the iTunes application (the one that says only iTunes)
    • click the OK button
    • click the Next button
    • either accept the name for the shortcut or type in your own
    • click the Finish button

If you want an iTunes icon on the Taskbar, then once you have a desktop icon for iTunes, you simply drag that desktop icon to the Taskbar, where it will pin it. The Desktop icon will be left on the desktop.
