Pairing Apple Watch to new iPhone

So everything I see tells you to erase your iwatch to pair it to a new phone when the old phone is dead or lost. The problem with this is the iwatch actually has data on it you don't want to lose as after checking icloud on the old phone some of the data is missing yet is still on watch. So how do you back up the data on the watch such as contacts so you don't lose them before you erase to sync to new phone? Not sure why Apple makes this so complicated since they know people lose or damage their phones all the time.

You would think that but we have restored her contacts using icloud and a bunch are missing yet when we go into her watch we can see them just fine. Her old phone is dead so we can't use that to unpair the iwatch but it seems crazy to erase the watch which seems to have the only good set of contacts to keep the bad ones that are currently in icloud.

There is no data on the watch that isn't on the phone,that's why when you unpair a backup is made of the phone because all the watch's data is sent to the phone constantly through bluetooth.
