How do I use a Hide My Email address that I created myself in iCloud?
Whenever I go to write an email using Hide My Email it creates a random one.

How do I use a Hide My Email address that I created myself in iCloud?

I contacted support and it seems that, although I can create the HME address in advance, I cannot initiate an email using it. I can only reply when someone contacts me at that address.
They suggested I leave feedback to suggest that option, which I did.

Thanks. I read that. I've read all the info and I understand how it works when generating random addresses.
The problem I'm having is that I already created an address but when I try to send an email, that address is not available on the dropdown box. Only my aliases or a random address. I cannot choose the HME address I created in advance.

iCloud+ is Required:
You need an iCloud+ Account to access and use Hide My Email. So, do you have a subscription to it? If so, subscribe to one, so you can use Hide My Email.

Troubleshooting your Account:
Having issues like this with your account, contact Apple Support. This is a service they officer. So, as long as you have this service available to you then all should work just fine. So, give Apple a call, and see what is going on with your account. Either it is a misconfiguration, or a glitch on Apple's user database.

Phone calls are taking a bit to go through at the moment, due to lots of calls. With the Coronavirus Pandemic, many are at home at the moment, with much time on their hands to contact Apple. So, just stay on the line, and you will get through :)
