Apple watch se unpairing

I attempted to pair a used apple watch to my phone. It got partially thru and then told me to update my phones software. Now my watch app shows a paired watch but the watch says i need to pair to a phone. I cannot unpair from my phone because the unpair tab is greyed out. What do I do?
