Is it possible to switch to Consumer Cellular with my iPhone 12 and my Apple Watch seven

To my understanding Consumer Cellular does not support the eSIM on the Apple Watch. You will need to contact Consumer Cellular directly to see if they support your version of iPhone. Your iPhone will also need to be unlocked from whatever carrier you are currently using, unless you purchased an unlocked iPhone from Apple to start with.
