Hand Washing Sensor and Monitoring

I have an Apple Watch Series 7. The hand washing feature is "hit and miss!" Sometimes it works perfectly and notices that I have started washing my hands IMMEDIATELY, then sometimes I can wash my hands for a full 30 seconds and nothing happens. Same sink--same soap--same hand motion. Also...even when it does catch on that I am washing my hands, it will often miss the fact that my hands are under the stream of water AND moving and I wind up washing my hands for 30-40 seconds. This is very annoying--because it logs the wrong information about my hand-washing practices. Has anyone else noticed this? And what is Apple doing to resolve this?
