Select the cell.

In the Tool Bar, click the Format Brush to open the Format Inspector in the right side panel.

Click the menu that says "No Fill" and select the type of fill you want to place in the cell.

Click the Color well below the fill menu to open the palette shown, or click the color globe for a larger selection of colours.
