Why does the tv not mirror the screen or sound with iPad, only the episode title

We see you reached out from an Apple Support article regarding screen mirroring. The section titled "If you see video but can't hear audio" will be most helpful in this situation.

If you can't hear audio when you're streaming videos from your iOS device or Mac to your Apple TV, make sure the volume is turned up and not muted on both your iOS device and your television or receiver. 

If you're streaming videos from an iPhone or iPad, check the Ring/Silent switch. If it's set to silent, you'll see an orange line. Toggle the switch to turn on the ringer.

If you still aren't able to use AirPlay even after trying these steps, contact Apple Support.
