Logic Pro - Corrupting, Distorting and/or forgetting Synths and Soundfonts

I'm a very new Logic Pro user, and I just bought a new M1 MacBook Air about a week ago. So far I've been having this terrible issue related to MIDIs, synths, and playback. I had just recently finished a song using .sf2 sound fonts, and saved the project. After going back and opening it just now, all of the piano roll data seems corrupted (off-key, distorted, wrong notes). It was not just a playback issue, as when I would go to bounce an mp3, the sound fonts would still be messed up after rendering.

This also seems to happen with two different synth plugins (Surge and Analog Lab V) in a separate project. In those instances, the synths would suddenly stop playback, and when re-loading the project, would be either reset to their default settings, or again sound corrupted and distorted. I can't seem to figure out why this is the case - I don't think it's a hardware issue, as I use another DAW (FL Studio) which has not had any issues, but I am not 100% sure. Any help would be appreciated!
