Incorrect APN settings

I used my iphone in Japan 5 years ago with a temporary data sim, I had to configure specific APN details for it to work. Since then my phone always reverts to these settings (I have reset network setting etc). Now my carrier won’t allow me to change APN settings so I can’t manually change them. Is there any way I can erase the details that are auto populated by my phone from the time I used it in Japan?

iPhone 13 Pro, iOS 15

I'm not sure how it could be a result of anything syncing down from iCloud since those kind of settings shouldn't be included.

Those settings come from the carrier profile. That gets set when the SIM is read. If it's a supported carrier, it's set automagically and there is no option to change the APN settings.

Here's the problem I've seen... If you are using an unsupported carrier (which I believe ID mobile is) that uses a supported carriers network (which they are probably doing) as an MVNO, it's possible that it's being read as the supported carrier that's actually handling the traffic instead of the carrier you're using, meaning you can't change the APN settings. In that case, you may need to manually download a profile from your carrier to get things working correctly.

You could experiment by forcing the phone into recovery or DFU mode and restoring iOS, then setting it up without signing into your iCloud account. If you still have the problem, and your carrier isn't able to help you, you may just want to consider switching to one of the supported carriers. 3, BT, EE, GiffGaff, O2, SKY, Talk Mobile, Virgin Mobile, or Vodafone.

From what I can see, ID uses the 3 network, but that is NOT the same as using 3.

You might see if they have their own support forums. I doubt you are the first person to encounter this.
