Why can’t I add a vanilla gift card to my wallet

You'll want to make sure you're adding a credit or debit card, and that the card is from a bank that supports Apple Pay.

Apple Pay participating banks in Canada, Latin America, and the United States

If you're unable to add the card directly in the Wallet app, you'll also want to check the app of your bank. With some banks you'll need to add the card to the Wallet app directly through their app.

If the card it not compatible with Apple Pay/the Wallet app, you should get some sort of message letting you know that when you attempt to add the card.
