Selecting All eMail Recipients:
You need to create a reply to select them all. Then copy and paste them into a new eMail. The click Send.

Selecting BBC Recipients in Sent Messages:
This is Not an Option:
Attempting this myself, it shows which were Blind Carbon Copied, but adding them does not mention "BCC". So, if this is a must then use a computer to decipher all of those in the BBC field.
Recommend this to Apple:
Do your Part: Let Apple know that you want this to be an option. They may not get back to you directly, but the more feedback they receive on this, the more they'll know what their customer's prefer, and what to include in iOS versions to come.
