Selecting All eMail Recipients:

You need to create a reply to select them all. Then copy and paste them into a new eMail. The click Send.

In Depth:

1. Tap: the arrow on the bottom
2. Tap: Reply All
3. Select: the To: line
4. Tap: the "+" next to any name that is grey
5. Tap: the to: line
6. Tap: Select all
7. Tap: Copy
8. Create: a new eMail
9. Tap: the to: line
10. Tap: Paste
11. Create: the reset of the eMail
12. Tap: Send:

Selecting BBC Recipients in Sent Messages:

This is Not an Option:

Attempting this myself, it shows which were Blind Carbon Copied, but adding them does not mention "BCC". So, if this is a must then use a computer to decipher all of those in the BBC field.

Do your Part: Let Apple know that you want this to be an option. They may not get back to you directly, but the more feedback they receive on this, the more they'll know what their customer's prefer, and what to include in iOS versions to come.
