For the past few months I have been having this issue with my Desktop tab disappearing from the menu bar in finder. It happens randomly while I am working and I have to go in preference to add it back which is super annoying. Any suggestions on how to stop this from happening or even why this is happening? Never had this issue previously on my other MacBooks

If it is a corrupt plist, delete the com.apple.finder.plist
Found here Finder>Go>Go to Folder, copy and paste:
~/Library/Preferences/com.apple.finder.plist
default plist is rebuilt automatically.
To Relaunch your Finder from the >Force Quit>Finder>Relaunch
try again setting up your sidebar.
