How do I fast forward recorded shows on Apple TV?
Actually, I just described what the docs call "scrubbing". clicking right-side or left-side of the touchpad/ring jumps 10 secs either way, holding down rewinds or fast-forwards faster until released. See: Control what’s playing on Apple TV - Apple Support.

That's not my experience... Just about every streaming service app I use on my 2017 ATV4K allows me to fast-forward or rewind by clicking the center of the Siri Remote touchpad (or the play/pause button), and then repeatedly swiping right to fast-forward or left to rewind... I believe the newer Siri Remote allows you to trace around the touchpad clockwise (ff) or counterclockwise (rw) like the early iPods.
Sure, some do. But, if you're watching say through your cable provider app, or some networks, fast forwarding may be disabled (it's annoying). I'm much more interested in the "recorded" part of the question.
