Need a backup disk that's compatible with my 2020 iMac desktop running Big Sur OS 11.6. I recently bought a SanDisk Extreme Portable SSD 1TB and the volume is not compatible. Previously, I tried a G-Technology 1TB G-Drive mobile USB-C but it was "fried" when I tried to write data to it. Can anyone recommend a decent back-up disk to run with Time Machine?

Look at the external SSDs from OWC (MacSales.com). You can call Customer Support at OWC and they can suggest the best of their many models for your intended use and budget. I have 8 of their SSDs currently in use. Very reliable, great customer support and warranties.
Many experienced users prefer the OWC Mercury Elite Pro series, why... simple they are dead reliable, reasonably priced, OWC has great support etc. In short there is no reason to not use them. I have some that are 15 years old that still work just fine.
I have no problems with my SanDisk Extremes. As hinted, you might just need to format it first.
HDD technology is mature and you can't hardly buy a "bad" one or one that is incompatible. Stick to a major brand and get 2-3x your internal drive's capacity.
The problem with your SanDisk was likely incorrect format (many come formatted for Windows) or faulty even if new.
You may want to try following the Apple instructions in this link for using the SanDisk drive you already have or after purchasing another drive.
Most should be fine. I use Samsung SSD in my own enclosure and no issues. I have found that Sandisk SSD to not be reliable in file transfers as the write speeds fall off quickly.
