Apple Mail: Searching Field: How can I search for all emails for a select keyword BUT exclude specific mailboxes?

Using the search field on the top right of Apple Mail, I would like to search across emails in all mailboxes but exclude emails that have already been deleted or archived. What do I need to type in the search field to allow this?

MacBook Pro, OS X 10.11
