How to uninstall Safari extensions on your iPhone 12

How do you uninstall Safari extensions on your iPhone 12 and do I need this feature to be uninstalled or not? Why? What does this feature even mean and/or do exactly? I have a couple people who have hacked into my phone so this is why I’m asking and is this something they could have done by adding extensions or not?
