My email on my iPhone just stopped working displaying a message "Exchange account-unable to verify account information error message".

The best way is to delete the Exchange account from Settings, Mail, Contacts and add it back.
You may need to use Microsoft Authenticator if you have 2 factor auth turned on in Microsoft account.
I ham up to date with Software and I don't not show "Settings, Mail, Contacts" under settings. I have mail, but once your in mail no contacts?
