As previously mentioned, sometimes an app is needed to interface between a device and the printer. So let's see if that changes the behavior as macOS, iPadOS and iOS are all different operating systems. Does using the Epson developed app change anything?
Are your iPadOS and iOS devices up to date? You can double verify that in Settings > General > Software Update. Have you ever been able to successfully AirPrint from your iPadOS and iOS devices?
Two additional steps when encountering a printing situation like this are to restart your Apple devices and the printers. If the issue persists, also restart your network hardware. Typically, that can be done just by unplugging for 30 -45 seconds, then plugging back in and letting the modem/router boot up again.

Some printers may require an App to set up and print from your devices. According to Epson's support page ( Epson XP-640), Epson iPrint App is available for iOS and iPadOS.

I followed instructions. Still the problem persists. The printers, Epson XP64O and Epson WF-7720 which are connected to my wi-fi, are not found…neither by my iPad nor my iPhone nor my wife’s iPhone and iPad.
Walk us through the exact steps you are trying to print, please.
Example:
Open an email message
Tap the forward button
Scan down to bottom and tap Print
At the top of the print page, you should be able to choose your AirPrint Capable Printer
Then the Print Print button at the top of the page
This problem is only with my wife’s and my iPhones and iPads. When attempting to print either photos, pdf files, one word document was, the app does not find a AirPrint printer. Both my desktop Macs are also wi-fi connected and print without error to both Epson printers.
Ironically, the printers are found by both of my desktop Mac computers.
