A few days ago my phone (Iphone 11pro) started to randomly skip almost half of the songs I have downloaded on apple music, at first I thought that maybe after I update the software the issue will go away, but it didn’t. By each day I get access to less and less songs, since more and more of them keep skipping.

You'd want to be sure that the iOS software on your iPhone is up-to-date. We see that you state that it is. Just to be sure, you can check at Settings > General > About and update if you need to: Update iOS on iPhone

If you're still having an issue, we recommend removing the affected music to then download it again:
Delete music in the Apple Music app
Add music to iPhone and listen offline

In the end I backed up my apple music library on my computer and then deleted apple music and re-downloaded it again. After that everything worked again.
I’m currently listening without gaps and skipped songs and the mix sounds correct. I don’t know. I’m on wired headphones, Bluetooth off, denied all apps access to Bluetooth, disallowed changes to Bluetooth and Music and Media configurations, and turned off location services.
