New Mac with Big Sur?
My MacBook died of old age and I need a replacement. But I don't want Monterey on it. Is getting a new Mac with Big Sur an option?

Generally, new Macs ship with the current macOS version, especially if that version has been out for 6 months or more.
If the New Computer comes with Monterey macOS 12 pre-installed - The computer can not downgrade to an older version of macOS.
The Apple Licence of Use will not permit this.
Outside of the Licence issue - the computer will see the Bootable Drive with Big Sur but will not allow the Migration period.
Even if one were to purchase a Refurbished directly from Apple they too would probably come with Monterey macOS 12
I just remembered that I have a bootable backup with Big Sur on it. That should work. I can start up a new laptop from there and install Big Sur.
Maybe, maybe not.
I miss those days when the computer did what I want it to do instead of me having to do what the computer wants me to do. Back then it made sense to spend money for a computer.
