You don't. The Health app is not something that can be deleted. Besides wanting to delete the app, what exactly are you trying to prevent, or accomplish? Maybe there is an alternative.
As I said earlier then, the Health app is not something you can delete. You can free up space as well by using Settings>iPhone Storage>Offload Unused Apps. That will indicate how much room can be saved and can get rid of apps you have not used in a while.
