I have two Apple TV’s and could always select the tv to pair to a Sonos speaker using the tv icon on the apple remote. Today neither one gave me the option to pair. It worked fine a couple of months ago. Did apple or Sonos change something?

No, you should still be able to Use Apple TV to play audio throughout your home even with all the latest updates. Your Apple TVs are apparently not seeing the Sonos on your local network... I suggest you unplug and restart everything -- starting with your WiFi/Ethernet router that connects everything.
