Your Apple Watch doesn't have any way to measure glucose or A1C on its own. If you have a continuous glucose monitor with an iPhone app, it may well sync with Health and may have an Apple Watch component that will let you see the information on your watch. Check with the developer for your particular continuous glucose monitor.
