hi, so i got a new phone but didn’t unpair my apple watch from that phone and i don’t have it anymore so i cant erase anything from that old phone. how do i connect the apple watch to this phone without having the other phone?

Setup your Watch to a new iPhone

And start at the section "if you don't have your old phone or have erased it".
