Settings incompatible with private relay, but no specific settings defined.
I keep getting an error stating my settings are incompatible with private relay, however it does not define which settings are incompatible.

Well— I wish I had a definitive answer.
I have seen many issue with these new features introduced.
Note: iCloud Private Relay is not available in all countries or regions and is currently in beta in iOS 15, iPadOS 15, and macOS Monterey.

You can try —Open mail app select Mail>Preferences>Privacy disable:
“Protect Mail Activity” /
“Hide IP address” /
“Block all remote content”
I don't know if this would have an effect are not—but there are many associated issues here as well, with all these new features.
