Hey there! Does anyone knows how to add this kind of background that would be adjusted as the length of the text (subtitle) changes?

Sorry, I think I misunderstood.
What you need is to go to Edit>Captions>Add Captions and simply type in your caption.
It will have a black background automatically added.

Put a Custom black generator between the title and the main video.
Then resize and reposition it using the Transform tool.
