How do I embed PDF or .doc in email -- so people see it when they open the email. So they don't have to open an attachment to see the PDF--it is just there.

There is no way to control how someone else's email client displays what you send.
Mail will always add the "inline" directive, but that has no bearing on how their email client will actually display.
