We're happy to help. We understand that your spreadsheet did not back up. Is that correct?
iPad backups don't include documents that are stored in iCloud. This may be how Excel is set up. Take a look at what backups don't include: Backup methods for iPhone, iPad, and iPod touch
If that doesn't help explain what happens, we recommend contacting Microsoft support to see how the files are backed up.
