Multiple apps are being run to track, create pdf’s, log calls, and texts

Does anyone know how my ex wife can create so many profiles on MS Edge and use all my emails to get into my icloud? Not just one but 3, I’ve been dealing with security-apple and tier 2 and up to no avail. The R-project, dockary, WebKits, and all that Google and FB turn a blind eye too. I’m in a controlled environment, please I’m not joking, where my friends and I can search for the same thing and they find the same, but I go through 20 re-directs to some nonsense. And the Game Center app is toggling on even when EVERYTHING on the cloud is off and cellular (yesterday on the phone with apple) I cannot delete all off my back ups they turn off leaving data and anything photo or document wise that is not hidden (photos) is wiped clean. Any help would be great. I have it all backed up on passports (11tb) starting with shortcut hacks for my texts and location

iPhone 12, iOS 15
