My uncle gave me his old app watch but doesn’t remember Apple ID password or phone number used to set it up what can I do now or doesn’t have the box it came in it was a few years ago when he got it?

Activation Lock is an anti-theft feature that cannot be bypassed. Only the previous owner can remove the lock by using their Apple ID & password. If the previous owner cannot or will not remove the lock, then the watch is useless to you or anyone else.

If he can't remember/gain access to the apple id that paired the watch to the phone.Take the watch and it's receipt with the serial number along with some photo id and any other proof of ownership to an Apple Store and request that they remove the Activation Lock for you.
