How can I stop the pop up help menus that constantly pop up when I am working on a document. I click on the document to add or change something and up pops this menu that persists. I have to click else where to get rid of it.

Helper type pop ups within an app are generally controlled by the app. Somewhere in the menu system or maybe preferences, you should be able to turn them off.

May consider updating the existing version of Monterey as per user profile MacBook Air 13″, macOS 12.2
Current version is 12.3.1 and it brings Bug and Security updates.
Suggest performing a Time Machine Backup before updating
