I am working on a Word Processing document. At first I was able to add new paragraph styles and redefine them. Suddenly these functionalities are not available anymore. I can't add new styles nor redefine them, everything is disabled. What should I do?

Thank you for those details. Are you sharing the document with someone else? If so, check to see if they made a change that could be causing this.

Updating is a good step.
Be sure to update any apps also:
Update from the App Store
• Update from the Updates pane: Click Updates in the sidebar, then click Update beside each app that you want to update, or click Update All.
• Update from the Discover, Create, Work, Play, Develop, and Categories areas: Click the Update button next to an app.

If I create a new document no, it works fine. While if I restart Pages it is still there.
The document is a shared file, it was working properly at first and suddenly the features became disabled, but I didn't change anything.
I tried recreating the same doc and sharing it and again, at first it works and then doesn't.
Yes, it is shared with 2 colleagues, but they were not using the document.
It'll try to update the OS from Big Sur to Monterey, maybe that's the issue.
