When I connect my 12 pro iPhone to my iMac(Late 2014, Catalina 10.15.7), it goes into a do-loop trying to download the photos from the iPhone to the iMac. I do I stop automatic sync?

Which system is running on your iPhone? If it is iOS 15.4.1 it may help to disable the cellular Hotspot on the iPhone, when you try to download from the iPhone to make it more responsive when downloading from the iPhone.
Is iCloud Photos enabled on the iPhone? This can cause an endless "Preparing" loop on the iPhone to prepare the images for downloading them.
I can no longer test with Photos 5 on Catalina, but are you seeing a button "Open Photos for this device" in the Photos Window, when Photos open? Then try to disable this button.
iCloud Photos was not enabled, but iCloud drive was enabled. I disabled iClould Drive and that seems to have solved the problem. Thanks.
The iPhone is using iOS 15.4.1. The hotspot is disabled. I do not use wireless to sync the iPhone to the iMac. I use the lightning cable.
