Installing Monterey on hard drive

I installed macOS Monterey on an external hard dive. What happens if I eject the hard drive?

If you try to eject it while the machine is booted from that drive, it will not eject. If you physically unplug it while booted from that drive, the machine crashes. Hard.

if you mean that you've already installed monterey on the external drive and now wish to remove monterey from it, just open disk utility and erase and reformat it like you would do with any other storage device.

please refer to this apple support page if you need it: Erase and reformat a storage device in Disk Utility on Mac - Apple Support
